How do you calculate the food cost of a pizza?

Divide the ingredient cost of one portion by the selling price before VAT. In the example above: €1.40 ÷ €7.73 = 18.1%.

What is a good food cost?

There is no single value for every venue: many operators use about 30% as a starting reference and adjust it to their own model.

Is margin the same as profit?

No. The difference between price and ingredient cost does not include staff, rent, energy, taxes or other business costs.
